Viking 2005 Ironstone Cabernet Sauvignon Nov 07

A brooding, sulking wine, it seemed as though it was being restrained against it’s will; showing aromas of black fruits, mint and coffee; there was a reasonable level of varietal typicality on the bouquet. A muscular-weight, firm, solid, tight wine that is well backed by fine, dusty tannins and fresh acid; it needs time to gain complexity and fill out. Blackcurrant, blackberry, plum, cherry and tomato leaf flavours are mainly off-sweet but there is an intertwined secondary layer of subtle sweetness, all of which finish with reasonable persistence and good length. Rated as Highly Recommended with **** for vale, the rating may improve as the wine matures. Drink over the 2010-2015, I preferred the structure and flavour profile of the Cabernet. Sealed with Diam, it costs $25 direct from the winery and at that price don't think twice about buying it, you wont regret it.
