Troll Creek 2005 Cabernet Sauvignon Aug 08 sells for $55 and is sealed under cork. This is a single vineyard wine made by Christian Canute from handpicked fruit grown in Bethany. The bouquet was initially closed and showed some medicinal type characters, but after some hours of airtime, Cassis, a subtle hint of pepper, and vanilla/mocha oak characters emerged. Pristine, deep, strong fruit is perfectly framed by silky-smooth tannins and forms a muscular-weight, supple, harmonious and solid wine which should become seamless in time. The mouth feel is both luscious and lovely. Juicy fruit delivers chocolate, black cherry/currant and mint flavours that are savoury and off-sweet, and finish with loads and intensity on long tannins, and refreshing acid. A well constructed and balanced wine; it's perfectly matched with hot bread, Bocconcini, basil, tomato and a balsamic/olive oil dressing. Rated as Excellent with *** for value, drink from 2012 to 2019.
