The Wilson Vineyard 2004 Cabernet Sauvignon Aug 06

An earthy bouquet with blackcurrant, hints of spices and caramel oak leading to a palate that is totally savoury with virtually no sweetness at all; mulberry, blackcurrant, spicy oak, lots of greener ripe herb flavours and aniseed provide an agreeable level of complexity. A full-bodied wine with a firm consistency; it is solidly backed by a lavish level of powdery tannins, fresh acid and deeply-seated fruit. The wine went brilliantly with grilled, heavily peppered salmon fillets. Rated as Highly Recommended with **** for value, don't touch it until it until at least 2012, by which time the tannins should have resolved. Cost is $22 from the winery and sealed under screwcap.
