Steven John 1997 Cabernet
Sauvignon Sept 04
Delightful and enticing nose of ripe cassis,
subtle tobacco, sweet spearmint and menthol. The palate is a bit of surprise
with a decidedly off sweet attack riding am underlying wave of less obvious sweet
fruit. Very interesting flavour profile with red and
blue berry flavours, herbaceous characters and
spearmint. The wine has thrown a huge sediment and the tannins have now
resolved leaving the wine smooth but with good grip; the acid is still
youthful. Mid-weight, the finish whilst not huge does seem to leave subtle flavours
hang around the taste buds for ages. Rated as Excellent,
it is at its peak.
