Dalwhinnie 1997 Cabernet
Sauvignon July 04
The bouquet showed black berry fruit, spice (almost nutmeg),
with earthy mushroom and coffee oak that is typical of the region. The palate
was true to the nose with the addition of mint and leafy flavors. Ample-weight,
the abundant dusty, drying tannins are resolving well but they still have a
fair way to go. The fruit fills the mouth and finishes long. Rated as highly
recommended, I will it try again in about 18 months but it is still likely to
need more time after that to fully come together.
