Chapoutier Australia 2000
Cabernet Sauvignon – April 2003
Wine tasted completely blind
This has got to be a Cabernet; the nose is dominated by
dusty French oak with good red/blue fruit and mint.
A just ample weight very young wine that needs a fair bit of
time for the dominant dusty tannins to settle and integrate but the fruit is up
to the task. On the palate the solid layered structure is obvious and the wine
will be all the better for it in the future. Initially the flavour profile is
slightly sweet but it goes sour and then slightly savoury, an interesting
complex package with some refinement.
